Sugared Walnuts  

1 large package of walnuts
1 cup sugar
1/2 cup water
1 teasp cinnamon
dash of salt
1-1/2 teasp vanilla

Toast walnuts in baking pan at 325 degrees for about 10 minutes before using. Let them cool slightly before adding to the following mixture:

Combine sugar, water, cinnamon and salt in a saucepan and cook until it reaches 236 degrees on a candy thermometer without stirring. Remove from heat and add the vanilla and walnuts. Stir until nuts are well coated and mixture loses its gloss. Pour out unto greased cookie sheet. Separate nuts as they cool. 

Store in candy tin or plastic bags.
