Tomato Torte  

Your favorite pie crust recipe, or
1 Pillsbury pre-made pie crust

2 onions, sliced thinly
1 teasp. sugar
1 Tbls. olive oil

3 or 4 small fresh tomatoes, sliced thinly
8 oz. Feta cheese

4 Tbls. grated parmesan cheese
More olive oil for drizzle

Fresh basil, chopped, for garnish

Place pie crust into torte pan (or place on baking sheet and crimp edges). Bake until browned, about 10 minutes in 350 deg. oven.

Sauté onions in olive oil, then add sugar to caramelize. Cool slightly, then spread onto pie crust. Sprinkle Feta over onions. Then layer the tomatoes over the Feta. Drizzle a small amount of olive oil over tomatoes. Sprinkle parmesan cheese over tomatoes and return to oven for 10-15 minutes, until Feta is bubbly. Garnish with basil and serve at once.
