Tom's Chinese Green Beans

2 lbs. fresh green beams
1-1/4 cups, plus 1t soybean or peanut oil
1/2 tsp minced garlic
1/2 tsp. hot oil (from Asian market)
1 tsp soy sauce
1/4 cup water
1 tsp. white wine
1 tsp. sesame oil
pinch of white pepper

Pour 1 cup oil in a wok or deep skillet and heat until it is very hot. Carefully add a handful of green beans and fry for 2 mins, or until the skin is wrinkled.  Remove and drain, then continue frying the remaining beans by handfuls.  When all are cooked, pour off the oil.
Return the wok to high heat. Add the remaining 1 tsp. of oil and heat. Add garlic, hot oil, soy sauce, water, wine and sesame oil.   Place beans into wok and stir fry quickly, about 30 seconds. Add white pepper. Transfer to serving dish & sprinkle sesame seeds over the top. serves 4-6.
