Louise's Tahitian Chicken Salad  

1-1/2 cup mayonnaise
1 cup raisins, plumped in white wine
1 cup salted peanuts
1 cup mango chutney
2 lbs. cooked chicken, cut up
2 cups sliced bananas
salt and pepper to taste

Mix together raisins, peanuts & chicken in a large bowl. Combine mayo and chutney in a small bowl and pour over chicken mix. Then add bananas and gently toss. Chill slightly. Serves 8 to 12. 

(This recipe can easily be cut in half. For a lighter version, substitute lite mayo, sour cream or yogurt for the real thing.)
