Sweet Potato Pie

2 cups sweet potatoes, cooked & mashed
1 T freshly ground nutmeg
1 t cinnamon
1 cup sugar
1 t vanilla or maple flavoring
1 cup milk
1 t salt
1/2 cup chopped pecans (optional)
2 eggs

Sift sugar with salt, nutmeg & cinnamon.  Mix into the potatoes.  Add butter, and mix.  Add eggs one at a time, beating after each addition until well-blended.  Stir in milk and flavoring.   Pour into an unbaked pie shell.  Bake at 325 for 30 mins.  Remove and top with pecans, if desired. After topping the filling with pecans, return to the oven and bake 15 mins more.  If pecans are not used, bake pie for a total of 45 mins.
