Oak Bay Rhubarb Muffins  

1-1/4 cup brown sugar
1/2 cup oil
1 egg
vanilla
1 cup buttermilk
1-1/2 cups frozen diced rhubarb
1/2 cup chopped walnuts
2 cups flour
1/2 cup wheat germ
1 tsp baking soda
1 tsp baking powder

Mix brown sugar, oil, egg, vanilla & buttermilk. Stir in rhubarb. Mix dry ingredients together and stir into wet ingredients until blended. Fill greased muffin pans and sprinkle with cinnamon & sugar. Bake for 20-25 minutes in 400 degree oven. Makes one dozen muffins.
