Mom's Potato Salad  
6 to 8 large red potatoes, boiled until just barely soft
4 hard boiled eggs, sliced
1/2 cup celery, diced
1/4 cup diced green onions
1/4 cup diced sweet pickles

Salt, pepper & garlic salt to taste

Dressing:

1/2 cup mayo
1/2 sour cream, light
1 tablespoon French's mustard

Peel and slice potatoes into cubes, add 3 of the hardboiled eggs, reserving one egg for garnish. Add the celery, onions and pickles. Carefully mix together and add seasonings.

Mix dressing ingredients together and stir into salad. Garnish with reserved hardboiled egg. Chill until time to serve.

Chill any leftovers immediately.
