Romaine-mango Salad  
One head of romaine lettuce, chopped
One large mango, sliced into small pieces
Handful of walnut halves, toasted
Swiss cheese, shaved

Dressing:
2 Tbls lime juice
2 Tbls honey

Blend the lime juice and honey with a fork in the bottom of a salad bowl. Add mango slices and chill for 15 minutes. When ready to serve, toss the romaine into the mixture and divide onto salad bowls. Top with walnuts and Swiss cheese curls.

Serves 4
