Fall Chicken Salad  

The salad:
2 cups cubed cooked chicken
2 nectarines, peaches or papayas, cubed
1/4 cup diced green onions
1/4 cup toasted slivered almonds

The dressing:
1/2 cup mayo
2 tsp. lime juice
1 tsp. sugar
1 tbls. grated ginger
salt and pepper to taste

Combine dressing ingredients. Refrigerate for a few minutes. Mix salad ingredients together. Fold in dressing. Chill and serve.

Serves 4 to 6.
