Cheesy Baked Eggplant  


1 large eggplant
1/4 lb. Feta cheese
(or substitute your favorite cheese)
several cloves of garlic, mashed
Parmesan cheese
salt and pepper to taste

Slice eggplant in half, longwise. Place both halves on microwave plate, cover with plastic wrap and cook for 2 minutes. Remove and place both halves on a baking dish. 

Make thin sliced grooves into fleshy inner eggplant and stuff with mashed garlic and cheese. Add salt and pepper and sprinkle with parmesan cheese. 

Bake in a hot oven (350 degrees) until eggplant is soft and cheese is browned and bubbly.

Serves 2 as an entree or 4 as a side dish.
