Cheesy Baked Eggplant | ||||

Make thin sliced grooves into fleshy inner eggplant and stuff with mashed garlic and cheese. Add salt and pepper and sprinkle with parmesan cheese. Bake in a hot oven (350 degrees) until eggplant is soft and cheese is browned and bubbly. Serves 2 as an entree or 4 as a side dish.
