Curried Chicken Tea Sandwiches  

1 cooked skinless, boneless chicken breast
1-1/2 tbls. mayo
1/2 teasp. Dijon mustard
1 teasp. curry powder
black pepper
4 slices whole-wheat bread
1 tbls. butter
1/2 avocado, cut into 1/4 in slices

Coarsely chop chicken. Place in a bowl and combine with mayo, mustard, curry powder, salt and pepper.

Spread chicken mixture on 2 slices of bread. Spread button on remaining slices. Place avocado slices on chicken mixture. Cover with buttered bread. Trim crusts and cut into quarters.
