Arboleda Beet Orange Salad

4 beets, cooked,  peeled and finely chopped
zest and juice of one orange
4 oz. crumbled gorgonzola cheese
1/3 cup chopped walnuts
1 t.  grated fresh ginger
2 T. chopped basil


1/4 cup light olive oil
1/4 cup balsamic vinegar
salt and pepper to taste
1/2  a small red onion,  sliced

Combine all and let sit for a few minutes. Serves four.
