Apple Cake  

1 cup sugar
1/2 cup margarine
2 eggs
2 cups unsifted flour
2 teasp. baking soda
1 teasp. cinnamon
1/2 teasp. nutmeg
salt

4 cups diced pared raw apples
1/2 cup chopped walnuts

Powdered sugar for topping

Preheat oven to 325 degrees. Grease a 13x9 inch baking pan. Into a large bowl, combine the sugar and margarine until creamy, then agg the eggs until blended well. Sift flour with soda and spices and add to the sugar mixture. Fold in the apples and nuts until just combined. Pour into baking pan. Bake for 1 hour. Test for doneness -- top will spring back when lightly pressed with finger.

Cool slightly and then sprinkle powdered sugar on top. Cut into squares and serve warm. It's nice with ice cream.
